I pulled this recipe out of the Miami Herald years ago. And been making it ever since--- beth

  • 1 pound pork sausage
  • 2 potatoes, peeled and diced
  • 1 1/2 cups chopped celery
  • 3/4 cup diced sweet onion
  • 3/4 cup butter
  • oh so much garlic, chopped
  • 1-2 loaves of bread, either mushy white bread or sourdough loaf... both are good
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground sage
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • spoonful Bells' seasoning
  • dash nutmeg
  • 2 cups, more or less chicken or turkey stock
  • 1/2 c butter

 

Tear bread apart night before and let dry out overnight.

Brown sausage. Sauté onions, celery, carrots, and garlic in those drippings.

Bake two potatoes in the microwave. Scoop out flesh and mix into sausage and vegetable mixture. Add seasonings.

Transfer bread bits into roasting pan. Add cooled sausage mixture. Smush up and mix with hands. Pat smooth. Pour 2 cups stock that has added 1/2 cup melted butter... all over the top. Bake until browned. After turkey is finished... drizzle turkey drippings over the top and reheat in oven.
